Rabbit casserole
1 rabbit for 2 people
2 for 2 to 3 people
Soak the rabbit in salt water for 1 hour. remove and joint it
You’ll need some seasoned flour. Here’s how to make it.
1 cereal bowl of plain flour
2 teaspoons of salt
2 teaspoons of b.b.q. spice[ get it in woolies]
2 teaspoons of season all
2 teaspoons of freshly ground black pepper
1 teaspoon of smokey b.b.q.[ get it in a spice rack in green jar, in supermarket]
Mix all together and keep in a screw top jar. Use whenever needed. Good for beef casserole.
2 to 3 tablespoons seasoned flour.
Extra seasoned flour.
2 medium potatoes cut in halves
2 large carrots, chopped diagonally roughly.
1 stick celery sliced
½ red capsicum. cut in chunks
3 mushrooms sliced
1 brown onion sprig of sage, thyme, rosemary and oregano.zap altogether in a chopper or foodproceesor.
1 heaped teaspoon of crushed garlic
1 “ “ “ “ ginger.
½ tin diced tomatoes
1 teaspon of salt
½ to 1 cup of water
2 to 3 tablespoons of olive oil
Line a cereal bowl with greaseproof paper and pour in 2 to 3 tablespoon of seasoned flour. This saves the flour sticking to the bowl and easier to clean.
heat the olive oil in a large non stick fry pan on medium heat
Coat each rabbit piece with seasoned flour on both sides
and brown quickly on both sides. Remove and keep aside in a large casserole dishAdd more oil if needed and sauté the minced onion and herbs. add ginger and garlic and cook for a minute or so.
Add chopped potatoes, carrots, celery, capsicum and,mushrooms.
Stir fry for 2 minutes and then add 1 and ½ tablespoons of seasoned flour.
Stir and coat all the veggies with flour, add ½ tin tomatoes and water and salt.It should make a nice sauce. If too thick add a little more water, but not too much.
Pour over the rabbit and arrange the pieces till nicely mixed in with the sauce
Cover and bake in a slow oven, 160 degrees for 2 to 2 and ½ hours, depending on how big the rabbit is. All you need is steamed green vegy to eat it with.
