Pasta sauce
2 tablespoons olive oil
I onion
½ cup fresh oregano and thyme leaves
4 cloves garlic
1 large tin crushed tomato
3 teaspoon sugar
3 teaspoon of dark vinegar
1 teaspoon of salt
Freshly ground black pepper
Put roughly chopped onion, with oregano and thyme leaves and garlic in a food processor and chop up finely
Heat olive oil in a heavy based saucepan and sauté the onion mixture
Add the tin tomato together with the rest of the ingredients. And stir fry for a while. Cover, turn the temperature down and simmer for about an hour or till nice and thick.
Put in a container and it should keep in the fridge for 2 weeks.
Use as base for pizza, or chicken pasta, in spaghetti bolognese,or marinara mix.
For chicken pasta, slice up 500gms of chicken breast or thigh fillets.
Heat up oil in fry pan and when hot add the chicken.
Stir fry on high heat till the moisture disappears and the chicken browns up.
Add crushed garlic,1 tablespoon of sweet chillie sauce, dash of soy sauce and ½ teaspoon of chillie paste,[ optional]. Then add half the pasta sauce and 1 cup of cooked penne pasta
Serves 2.
You could do the same with marinara mix.
